This Lemon Shrimp and Asparagus Stir Fry isn’t just another recipe; it marks a significant milestone in my culinary journey. You see, this was the very first dish I cooked that included meat after the intense wave of morning sickness finally subsided during my pregnancy. For weeks, the mere thought or smell of meat was enough to send my stomach into a tizzy.
If you’ve been following along, you might have noticed a string of vegetarian recipes gracing my kitchen and blog over the past couple of months. During that challenging period of all-day nausea, meat was entirely off-limits. I couldn’t even stand to be in the same room as it, let alone prepare or eat it. It was a complete dietary transformation driven by my body’s strong aversions.
My daily diet consisted primarily of comforting basics like cereal, fresh fruit, and toast. On rare, exceptionally good days, I might manage to whip up a simple veggie-based pasta or a hearty vegetarian taco. This meant that for about five weeks, my wonderful husband, Shawn, was largely fending for himself when dinner time rolled around.

Shawn is no stranger to the kitchen; in fact, he’s quite the grill master. So, when left to his own devices for dinner, he naturally gravitated towards grilling. This often meant cooking up dishes like chicken wings, sausages, or other meats that, to a pregnant woman, possessed the most potent and offensive aromas. I can still vividly picture him in the backyard, tending to the grill, while I was inside, literally plugging my nose to avoid the powerful scents wafting in. He was incredibly sweet about it, often offering to eat his meal outside so I wouldn’t have to endure the smell. But as long as I kept my nose firmly plugged, I managed to be alright.
As I approached the 13-week mark, a glorious shift occurred: my morning sickness began to recede. The constant nausea lessened, and miraculously, the thought of meat no longer filled me with dread. Feeling brave and eager to cook a proper meal again, I decided to venture into seafood. I remember arriving home from the grocery store, arms laden with bags. Shawn, ever helpful, began to unpack the groceries, and his eyes widened in disbelief when he saw what I had bought.
“Nat, there’s shrimp in here! Are you actually cooking dinner tonight?!” he exclaimed, a mixture of surprise and hope in his voice.
“Yes, I am,” I replied, a sense of quiet triumph swelling within me. “I’m making a shrimp stir fry.”
His reaction was priceless: “YESSSSSS! That sounds absolutely amazing!”

Poor guy, he was truly desperate for a home-cooked meal from his lady. I suppose being married to a food blogger has its perks, but also its moments of deprivation when morning sickness strikes!
While I wasn’t quite ready to tackle stronger meats like chicken or steak, shrimp felt like a “safe” reintroduction. And just in case my stomach decided to protest the seafood, I wanted to create a stir fry sauce that was robustly flavored with soothing lemon and ginger. There’s something undeniably comforting about the bright zest of lemon and the warming spice of ginger, both known for their stomach-settling properties. And so, the Lemon Shrimp and Asparagus Stir Fry was conceived.

Why This Lemon Shrimp and Asparagus Stir Fry is a Must-Try
And let me tell you, this recipe is absolutely delicious! Each bite offers a delightful combination of perfectly tender shrimp, crisp-tender asparagus, and wonderfully softened, sweet onions, all brought together by that incredible lemony and gingery stir fry sauce. It’s a symphony of textures and flavors that will quickly make it a family favorite.
The Secret to a Perfect Stir Fry: Cook Ingredients Separately
One of the key secrets to making a truly outstanding stir fry – and this applies to any stir fry, not just this one – is to avoid cooking everything at once in a crowded pan. Attempting to do so almost always results in some ingredients being overcooked and mushy, while others remain stubbornly undercooked. The flavors don’t meld as beautifully, and the textures are often compromised.
Instead, the trick is to cook each ingredient separately. This allows each component to reach its optimal level of doneness: the shrimp becomes perfectly pink and juicy without turning rubbery, the asparagus retains a satisfying crunch and vibrant green hue, and the onions caramelize slightly, developing a wonderful sweetness. Once each element is cooked to perfection, you then return everything to the pan, add the flavorful stir fry sauce, and allow it to simmer briefly. This final step reheats all the ingredients gently and gives the sauce a chance to thicken beautifully, coating every morsel in its savory, zesty goodness.
After such a long hiatus from enjoying a proper, savory dinner, this stir fry tasted like a feast fit for royalty. Shawn and I devoured the entire pan of this Lemon Shrimp and Asparagus Stir Fry as if we had just been rescued from a desert island, savoring every last bite. The best part, beyond the incredible taste, was the realization that I could finally eat well again! And for Shawn, it meant the welcome return of delicious home-cooked meals. I told you this dinner was a big deal – and it absolutely was!

Ingredients
Lemon Stir Fry Sauce
- ½ cup chicken stock
- 3 tablespoons soy sauce
- ½ teaspoon sesame seed oil
- 1 teaspoon ginger paste, or 1″ piece of fresh ginger, grated, or 1 teaspoon ground ginger
- 2 teaspoons honey
- 1 tablespoon corn starch
- 2 cloves of garlic, grated
- zest of 2 lemons, preferably using a zester that peels long, thin strips
- juice of 1 lemon, about 2 tablespoons
Stir Fry
- 4 teaspoons olive oil, divided
- 1 pound raw shrimp, peeled, deveined, tails removed and patted dry
- 1 medium yellow onion, sliced
- 2 bunches asparagus, ends trimmed off and cut into 1″ pieces
- 1 batch of Lemon Stir Fry Sauce (prepared above)
- 2 cups rice, cooked per manufacturer’s instructions (brown jasmine rice recommended)
Instructions
Lemon Stir Fry Sauce
-
Combine all sauce ingredients in a jar or small bowl and stir until well combined. Set aside.
Stir Fry
-
Preheat a large skillet or wok over high heat. Remember, you will be cooking each ingredient separately to achieve perfect doneness.
-
Add 1 teaspoon of olive oil to the hot skillet. Cook half of the shrimp for 1 minute per side, until they just begin to turn pink. Flip and cook for an additional 1 minute. Remove the shrimp from the pan and transfer them to a clean bowl. The shrimp will not be fully cooked at this stage; they will finish cooking later. Repeat this step with another 1 teaspoon of olive oil and the remaining half of the shrimp, ensuring not to overcrowd the pan.
-
Add 1 teaspoon of olive oil to the same skillet. Cook the sliced onion for approximately 5-7 minutes, stirring occasionally, until it has softened and just started to turn golden. Remove the onion from the pan and add it to the bowl with the cooked shrimp.
-
Add the final 1 teaspoon of olive oil to the skillet. Add the cut asparagus and cook for 3-5 minutes, or until it begins to soften and turns a vibrant bright green.
-
Once the asparagus is cooked, return the shrimp and onion mixture to the skillet. Pour in all of the prepared Lemon Stir Fry Sauce. Cook for an additional 3 minutes, stirring gently, or until the sauce has thickened and all the vegetables and shrimp are thoroughly heated through.
-
Serve warm immediately with your preferred cooked rice. Enjoy your homemade, flavorful stir fry!
