Ingredients

Soup

  • 2 tablespoons olive oil
  • 1 yellow onion, chopped
  • 1 large carrot, chopped
  • ¾ pound butternut squash, peeled and cut into ½” cubes
  • 1 tablespoon tomato paste
  • 1 cup canned diced tomatoes
  • 3 cups chicken stock
  • 1 teaspoon salt
  • 1 teaspoon pepper

Meatballs

  • 6 ounces ground beef, I get my beef from ButcherBox, which I highly recommend
  • 6 ounces ground pork, I get my pork from ButcherBox, which I highly recommend
  • 1 egg
  • ¼ cup cilantro, chopped
  • 2 teaspoons oregano
  • 2 teaspoons cumin
  • 1 teaspoon coriander
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon pepper

Garnish

  • 4 ounces napa cabbage, sliced
  • chopped cilantro leaves
  • 1 lime, cut into wedges

Instructions

Soup

  • In a saucepot over medium-high heat, warm olive oil until hot but not smoking. Add the onions, carrots, and butternut squash. Season with salt and pepper and cover, stirring occasionally until the vegetables begin to soften, about 6 to 8 minutes. Add the tomato paste, stirring to coat the vegetables evenly. Incorporate the diced tomatoes, chicken stock, and 2 cups of water. Bring the mixture to a boil, then reduce the heat to a gentle simmer. Continue to cook for 2 to 3 minutes, or until the soup slightly thickens.

Meatballs

  • In a mixing bowl, combine the ground beef and ground pork. Add the egg, all the specified spices, salt, pepper, and fresh cilantro. Mix thoroughly until all ingredients are well combined and evenly distributed.
  • Using wet hands to prevent sticking, gently form the meatball mixture into balls approximately 2 inches in diameter. This recipe typically yields about 16 meatballs.
