Lighter Chicken Parmesan with zucchini noodles

The memories of trick-or-treating with a little one, where the grown-ups end up collecting more candy than the child, are all too relatable. My husband, Shawn, and I experienced this firsthand with Josh when he was just 11 months old. Dressed as an adorable owl, he was the perfect prop for us to enjoy a nostalgic candy haul. We’d knock, say “trick-or-treat,” and then be the ones reaching into the candy bowl. Our neighbors, charmed by the tiny owl, didn’t seem to mind our adult participation in the candy collection.

Those candy bowls, a beacon of temptation, can be hard to resist. One piece quickly turns into two, and before you know it, you’re wondering if a truly healthy dinner can somehow magically erase all those extra sweets. The good news? This Healthy Chicken Parmesan is so wholesome and satisfying that it feels like a delicious fresh start.

Homemade Healthy Chicken Parmesan recipe

Traditional chicken parmesan, while undeniably delicious, often comes with a significant caloric and carbohydrate load due to its breading and frying. The breading, despite its initial crispness, frequently turns soggy and unappetizing once coated with sauce. For this recipe, we ingeniously skip the breading altogether, solving both the health concerns and the texture dilemma, while simultaneously making it a naturally gluten-free chicken parmesan option. The result is a dish that’s equally satisfying but considerably lighter.

Revolutionizing Chicken Parmesan: No Breading, All Flavor

Our approach to healthy chicken parmesan focuses on maximizing flavor without the unnecessary additions. We start by pan-searing boneless, skinless chicken breasts until they achieve a beautiful golden-brown crust and a slightly crispy exterior. This technique locks in moisture and develops a rich flavor that often gets overshadowed by heavy breading. Once seared, each chicken breast is generously topped with a vibrant marinara sauce, a blend of melty mozzarella, and savory Parmesan cheese. The dish then finishes baking in the oven, ensuring the chicken is perfectly cooked through and the cheese is beautifully golden and bubbly. This method delivers all the iconic taste of chicken parmesan in a much healthier, gluten-free package.

The Zucchini Noodle Advantage: A Low-Carb Revelation

Instead of traditional pasta, which can be high in carbohydrates, this recipe opts for fresh zucchini noodles. This simple swap dramatically reduces the carb count and calories, transforming it into a truly low-carb chicken parmesan. Zucchini noodles offer a refreshing, slightly al dente texture that complements the rich chicken and sauce perfectly. They absorb the flavors beautifully without overpowering the dish, making every bite feel fresh and light. Preparing zucchini noodles is quick and easy with a spiralizer or mandoline, and for optimal texture, I highly recommend serving them raw or very lightly sautéed to maintain their crispness.

The Secret Ingredient: Prego Farmers’ Market® Sauce

The true star that elevates this healthy chicken parmesan recipe is the Prego Farmers’ Market® Sauce. This high-quality jarred tomato sauce is my absolute go-to, easily found at most grocery stores, including Walmart, alongside the fresh zucchini needed for the noodles. What sets this sauce apart is its commitment to simple, farm-fresh ingredients. It boasts an irresistible taste, reminiscent of sauces made from scratch with vine-ripened tomatoes, aromatic garlic, and fresh basil – all picked at their peak and expertly blended with olive oil, black pepper, and oregano. Prego Farmers’ Market® Sauce comes in three delightful flavors: Marinara, Tomato & Basil, and Roasted Garlic. While all are excellent, the Tomato & Basil often captures my heart, adding a burst of authentic Italian flavor that I simply couldn’t recreate better myself at home. Using such a premium jarred sauce not only enhances the taste but also dramatically speeds up prep time, making this a genuine 30-minute dinner solution perfect for even the busiest weeknights.

Ingredients

  • 4 boneless, skinless chicken breasts, pounded to an even thickness (for quality meat, consider ButcherBox)
  • 2 tablespoons olive oil, divided
  • salt and pepper, to taste
  • 23.5 ounce jar of Prego Farmers’ Market® Sauce, Marinara, Tomato & Basil, or Roasted Garlic
  • 4 ounces shredded mozzarella cheese
  • 2 ounces grated parmesan cheese
  • 4 zucchini, spiralized into zucchini noodles using a spiralizer or mandoline (I prefer my zucchini noodles raw for best texture!)

Instructions

  • Preheat your oven to 425 degrees Fahrenheit (220°C) with the oven rack positioned in the middle for even cooking.
  • Heat an oven-safe skillet (cast iron works wonderfully here) over medium-high heat. While the pan heats, season your chicken breasts generously with salt and pepper on both sides. Once the pan is warm, add 1 tablespoon of olive oil. Carefully place the seasoned chicken breasts into the hot pan and sear until they are beautifully golden brown, about 2-3 minutes per side. This searing step creates a delicious crust without the need for breading.
  • Flip the seared chicken breasts. Immediately top each piece with approximately ¼ cup of Prego Farmers’ Market® Sauce, followed by 1 ounce of shredded mozzarella cheese, and ½ ounce of grated Parmesan cheese. Drizzle the remaining 1 teaspoon of olive oil lightly over the chicken.
  • Transfer the skillet to the preheated oven and bake until the chicken reaches an internal temperature of 165 degrees Fahrenheit (74°C), which should take approximately 10 minutes. The cheese should be melted and bubbly, and the sauce heated through.
  • Carefully remove the skillet from the oven. Arrange your raw or lightly blanched zucchini noodles on serving plates. Top the noodles with additional warm Prego Farmers’ Market® Sauce, then place a warm chicken parmesan breast on top of each serving of zucchini noodles. Serve immediately and enjoy your wholesome, flavorful meal!
