  • 1 tablespoon olive oil
  • 2 teaspoons kosher salt
  • 2 teaspoons pepper

  • 1 cup blueberries, whole
  • ¼ cup finely diced red onion
  • ¼ cup aged balsamic vinegar
  • ¼ cup chopped mint
  • 1 teaspoon salt
  • 1 teaspoon honey, optional (substitute date paste for Whole30 or leave out for Keto)
