  • ½ cup roasted, unsalted pecans
  • ½ cup olive oil
  • zest from 1 orange
  • juice from 1 orange, about ¼ cup

  • ½ teaspoon salt

Pork Chops

  • 2 10-oz bone-in pork chops (I get my pork chops from ButcherBox, which I highly recommend!)
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon smoked paprika
  • 1 tablespoon olive oil

Instructions

Orange Parsley Sauce

  1. In a food processor, combine the pecans, parsley, garlic, orange zest, orange juice, olive oil, and salt. Blend until well combined.
  2. For a thinner consistency, add more orange juice as desired.
  3. Taste and adjust salt if necessary.
  4. Scrape the sauce into a small bowl and set aside.

Pork Chops

  1. Preheat your oven to 425 degrees Fahrenheit (220°C) with the oven rack in the middle position. Heat a cast iron skillet (or any heavy-bottom, oven-safe skillet) over medium-high heat.
