  • 2 6-ounce boneless, skinless chicken breasts (I recommend ButcherBox for high-quality chicken)
  • ¼ cup Easy Whole30 BBQ Sauce
  • 2 heads romaine lettuce, thinly sliced
  • 4 slices thick cut bacon, cooked and chopped
  • 1 cup grape tomatoes, sliced in half
  • 1 yellow bell pepper, sliced
  • 6 green onions, sliced
  • 1 avocado, sliced

Instructions

BBQ Ranch Salad Dressing

  1. Combine both the homemade Whole30 & Keto Ranch Dressing and Keto BBQ Sauce in a small bowl and stir until thoroughly combined. Refrigerate until ready to use to allow flavors to meld.

BBQ Chicken BLT Chopped Salad

  1. Preheat your grill to medium-high heat. Lightly season the chicken breasts on both sides with salt and freshly ground black pepper. Generously brush both sides of the chicken with your Keto BBQ sauce.
  2. Place the chicken on the hot grill. Cook for approximately 10-15 minutes, flipping once halfway through, or until the chicken reaches an internal temperature of 165ºF (74ºC). Cooking time will vary depending on the thickness of your chicken breasts. Once cooked, remove from grill and let rest for a few minutes before slicing.
  3. In a large bowl, toss the thinly sliced romaine lettuce with your desired amount of the prepared BBQ ranch salad dressing. Ensure the lettuce is evenly coated. Divide the dressed lettuce among individual plates.
  4. Arrange the sliced BBQ chicken, chopped bacon, halved grape tomatoes, avocado slices, sliced bell pepper, and green onions artfully over the dressed lettuce. Serve immediately and enjoy!

If grilling isn’t an option, you can easily roast the chicken in the oven. Simply coat the chicken breasts with the BBQ sauce and place them on a parchment paper-lined baking sheet. Roast in a preheated 425ºF (220ºC) oven until the chicken reaches an internal temperature of 165ºF (74ºC), which typically takes about 10-15 minutes depending on thickness.
Boneless, skinless chicken thighs make an excellent and flavorful substitute for chicken breasts, offering a richer taste and more favorable fat macros for a keto diet.
Feel free to use red or white onion in place of green onions if you prefer a different onion flavor.
