  • 1 tablespoon lime zest, from about 2 limes


  • ¾ cup fresh lime juice, from about 4 limes


  • ¼ cup fresh orange juice, from about 1 orange


  • ¼ cup honey


  • 1 chipotle pepper from LA MORENA® Chipotle Peppers in Adobo – 13 oz can or 7 oz can, 1 chipotle pepper is mild spicy, add more for spicier


  • 2 garlic cloves


  • 2 teaspoons salt


  • 1 tablespoon vegetable oil


  • fresh cilantro leaves and wedges of lime for garnish

Paleo Chipotle Honey Lime Marinade

  1. Combine the lime zest, lime juice, orange juice, honey, chipotle pepper, garlic and salt in a blender. Blend until combined.
  2. Place the pork tenderloin in a gallon size zip top bag, and pour the marinade on top. Push out all the air and seal the bag. Refrigerate and marinate for 2-24 hours, the longer the better.

Cooking The Pork Tenderloin on the Grill

  1. Heat your grill over medium-high heat. Brush and oil the grill grates with vegetable oil.
  2. Add the pork tenderloin to the grill, discarding the marinade.
  3. Cook, turning once, until the pork reaches an internal temperature of 145 degrees Fahrenheit (63°C) on an instant-read thermometer, about 15-20 minutes, depending on the thickness of your pork tenderloin.
  4. Remove the pork from the grill. Transfer the pork tenderloin to a cutting board and allow to rest for a few minutes. This is crucial for juicy pork!
  5. Slice into ½” thick slices. Serve warm topped with fresh cilantro and wedges of lime.
