  • 3 pounds lean beef stew meat, cut into 1″ cubes (I highly recommend beef from ButcherBox, read my review)
  • ½ cup white all-purpose flour
  • 1 pound carrots, chopped (about 4 large, yielding 3 cups)
  • 1 pound Yukon gold potatoes, chopped (about 4 medium size, yielding 3 cups)
  • 2 large yellow onions, chopped
  • 2 cloves of garlic, grated or finely minced
  • 1 tablespoon tomato paste
  • 1 12-ounce bottle Guinness Draught beer
  • 64 ounces (8 cups) chicken stock, divided (Try my Instant Pot Chicken Stock recipe!)
  • 2 bay leaves
  • Salt and pepper, to taste
  • Olive oil, for browning
  • Microgreens for garnish, optional, or use chopped parsley

Instructions

  1. In a shallow baking dish, combine the flour, 2 teaspoons of salt, and 2 teaspoons of pepper. Add the beef stew meat and toss until each piece is evenly coated. Gently tap off any excess flour and transfer the dredged meat to a clean plate. Discard any remaining flour in the dish.
  2. Heat a large, heavy-bottomed skillet over medium-high heat for about 2 minutes. Add 1 teaspoon of olive oil. Add approximately ¼ of the floured beef to the pan, ensuring not to overcrowd it (overcrowding will steam the meat instead of browning it). Cook for about 4 minutes per side, or until a rich golden brown crust forms. Transfer the browned meat to your slow cooker. Repeat this process for the remaining beef in batches, adding another teaspoon of olive oil to the pan before each new batch. This usually takes about 4 batches to brown all the meat effectively.
  3. While the beef is browning, prepare your vegetables. Chop the carrots and potatoes into uniform 1″ x ½” chunks. It’s important not to cut them too small, as they need to hold their shape during the long cooking process. Add the chopped carrots and potatoes directly to the slow cooker with the beef. Next, chop the two yellow onions and set them aside.
  4. Once all the beef is browned and in the slow cooker, add another teaspoon of olive oil to the same skillet. Add the chopped onions to the pan, seasoning them with a pinch of salt and pepper. While the onions cook, use a wooden spoon to scrape up any flavorful brown bits and cooked flour that may have stuck to the bottom of the pan – this is called deglazing and adds incredible depth to your stew. Sauté the onions for approximately 5 minutes, until they begin to soften. Stir in the minced garlic and tomato paste, cooking for one more minute until fragrant. Pour in about 1 cup of the chicken stock, continuing to scrape any remaining bits from the bottom of the pan. Transfer the cooked onions and the flavorful liquid to the slow cooker. Finally, add the Guinness beer, the remaining chicken stock, and the bay leaves to the crockpot. Give everything a good stir to ensure the meat and vegetables are evenly distributed and submerged in the liquid. Cover the slow cooker and cook on HIGH for 4-6 hours, or on LOW for 8-10 hours, until the beef is incredibly tender and the vegetables are cooked through. Taste and adjust seasoning with additional salt and pepper as needed after cooking. Sometimes, I find a touch of garlic powder further enhances the flavor.
  5. Serve the Irish Guinness beef stew warm, garnished generously with fresh microgreens or chopped parsley for a vibrant finish.

Notes

To cook this hearty stew in a traditional oven, substitute a Dutch oven for the slow cooker. Follow steps 1-3 as written. After all the liquid and ingredients are added to the Dutch oven in step 4, bring the stew to a gentle simmer on the stovetop. Then, cover the Dutch oven tightly and transfer it to a preheated 225-degree Fahrenheit oven. Allow it to cook slowly for 6-7 hours, or until the beef is fork-tender.
