- ½ cup roasted, unsalted pecans
- ½ cup olive oil
- zest from 1 orange
- juice from 1 orange, about ¼ cup
- 2 cloves of garlic
- ½ teaspoon salt
Pork Chops
- 2 10-oz bone-in pork chops (I get my pork chops from ButcherBox, which I highly recommend!)
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon smoked paprika
- 1 tablespoon olive oil
Instructions
Orange Parsley Sauce
- In a food processor, combine the pecans, parsley, garlic, orange zest, orange juice, olive oil, and salt. Blend until well combined.
- For a thinner consistency, add more orange juice as desired.
- Taste and adjust salt if necessary.
- Scrape the sauce into a small bowl and set aside.
Pork Chops
- Preheat your oven to 425 degrees Fahrenheit (220°C) with the oven rack in the middle position. Heat a cast iron skillet (or any heavy-bottom, oven-safe skillet) over medium-high heat.
