Romanesco + Bacon

  • 4 slices of bacon
  • half a head romanesco, chopped
  • kosher salt to taste
  • 2 cloves of garlic, minced
  • juice from half a lemon

Keto Risotto

  • 1 tablespoon ghee
  • 1 shallot, chopped
  • 9- ounce package Natural Heaven Hearts of Palm Rice
  • ¼ cup white wine
  • 2 tablespoons original flavor Nutpods
  • kosher salt

Garnish

  • sliced almonds and finely chopped parsley, optional

  1. In a cast iron skillet over medium heat, add the bacon. Cook, stirring occasionally until crispy. Transfer the bacon to a paper towel to drain excess fat, reserving the rendered fat in the skillet.
  2. In the rendered bacon fat, add the chopped romanesco and a pinch of kosher salt. Cook for 8-10 minutes, stirring occasionally, until the romanesco is crisp-tender and slightly caramelized. Set aside.
  3. In a separate cast iron skillet or the same one after cleaning (if preferred), over medium heat, add the ghee and chopped shallot. Sauté, stirring occasionally, until the shallot is soft and translucent, about 3 minutes.
  4. While the shallots cook, prepare the hearts of palm rice. In a fine mesh colander, rinse the hearts of palm rice thoroughly under cold water. Press out as much excess water as possible using the back of a soup ladle or a clean kitchen towel. This step is optional but highly recommended for the best texture.
