- 1 medium red onion, sliced ¼” thick (I love using my mandoline)
- ¾ cup olive oil
- ¼ cup red wine vinegar
- 1 tablespoon dried oregano
- 1 teaspoon kosher salt

- Place the sliced onions in a Marinated Onion Bowl. (I highly recommend getting one! It holds the onions perfectly, has a pour spout for easy marinade pouring, and is such a gorgeous piece of pottery!)
- In a measuring cup, combine the olive oil, red wine vinegar, oregano, and salt. Stir well to combine all ingredients.
- Pour the prepared marinade over the sliced onions. Ensure all the onion slices are fully covered by the marinade for even flavoring.
- Let the onions marinate at room temperature on your counter for at least 12 hours to allow the flavors to fully develop and the onions to soften.
- The marinated onions will keep for at least 5 days stored at room temperature on the counter.
Notes
I don’t recommend storing these in the refrigerator for everyday use, as the olive oil will solidify. If you plan to keep them beyond 5 days, you could transfer them to a mason jar and refrigerate. Just remember to bring them back to room temperature before serving to liquefy the oil again.
These onions are truly best made with red onions. However, if a red onion is unavailable, a yellow onion can be used as a substitute, though the flavor profile may vary slightly.
For optimal flavor, dried oregano is significantly better than fresh oregano in this recipe. Dried oregano provides a more concentrated and consistent herbaceous note that infuses beautifully during marination.
