Ingredients

  • 1 large carrot, chopped
  • 4 stalks of celery, chopped
  • 1 yellow onion, sliced
  • 2 cloves of garlic, grated or finely minced
  • 1 tablespoon olive oil
  • 2 teaspoons kosher salt + 2 teaspoons pepper
  • 1.5 pounds chicken drumsticks, thighs and/or breasts (or equivalent of 3 cups shredded chicken)
  • 8 cups chicken stock
  • 2 12-ounce bags frozen artichoke hearts
  • 16- ounce bag frozen chopped organic spinach
  • 12- ounce bag frozen organic cauliflower rice
  • zest from 2 lemons
  • juice from 2 lemons

Instructions

  1. Heat your dutch oven over medium high heat. Add the olive oil, then add the carrots, celery, onions, garlic, salt and pepper. Cook until the vegetables are softened, about 10 minutes, stirring occasionally.
  2. Add in the chicken and chicken stock. Simmer until the chicken has an internal temperature of 165ºF, about 30 minutes.
  3. Remove the chicken and rest until cool enough to handle. Pull all the chicken off the bones, then shred the chicken.
  4. Return the shredded chicken to the soup along with the frozen artichoke hearts, frozen spinach and frozen cauliflower rice. Cook another 5 minutes until the frozen vegetables are thawed and warm.
  5. Add in the lemon zest and lemon juice. Taste for salt, pepper and lemon juice and adjust if needed.
  6. Serve warm, with additional lemon wedges.
  7. Will keep in an airtight container refrigerated for 5 days, or frozen for 6 months.

Notes

Chicken: I like to use chicken drumsticks because the dark meat adds tons of flavor, and so do the chicken bones when simmering in the soup. But you could substitute chicken breasts or thighs, or even already cooked shredded chicken to cut the cooking time way down!

Artichokes: I often find high-quality frozen artichoke hearts at stores like Trader Joe’s, Whole Foods, and Safeway. This is my preferred choice for the purest artichoke flavor. If frozen artichoke hearts are unavailable, canned artichoke hearts can be used; just be sure to drain and rinse them thoroughly to remove any briny flavor. Jarred artichoke hearts in oil will also work if drained and rinsed well.

Frozen Spinach + Cauliflower Rice: Using frozen spinach and cauliflower rice offers the ultimate convenience. You can always have them on hand, ready to go. If you prefer fresh, you can substitute 3 packed cups of fresh spinach and 2 cups of fresh cauliflower rice. Adjust cooking time slightly if using fresh to ensure they are tender.

Meal Prep Instructions: Store cooked soup in an airtight container for up to 5 days in the refrigerator. To reheat, microwave until warm (approximately 3-5 minutes) or gently warm in a saucepan on the stovetop.

Freezing Instructions: This soup freezes beautifully! Transfer cooled soup into a freezer-safe airtight container and freeze for up to 6 months. Reheat directly from frozen in the microwave (about 5-7 minutes) or on the stovetop over low heat until thoroughly warmed through.
