Embracing the Fall Morning Ritual
There’s something truly magical about fall mornings. As soon as the season arrives, I find myself yearning for a comforting routine, especially when it comes to cozy family breakfasts on the weekend. My ideal morning begins just before my husband and baby wake, allowing me a precious moment of quiet reflection. With a hot cup of Bigelow Tea in hand, I settle into the warmth, letting the soothing aromas prepare me for the day ahead. This quiet ritual, coupled with the anticipation of a delicious meal, truly nourishes my soul.
While my boys enjoy their last moments of sleep, I sip my tea and begin preparing our breakfast. And if it’s October, you can almost always bet that these wholesome keto and paleo pumpkin pancakes are on the menu. They embody everything I love about fall: warmth, comfort, and the unmistakable taste of pumpkin spice. These pancakes aren’t just food; they’re a part of creating cherished family memories, making every weekend morning feel special.
The Power of Smart Ingredients: Keto & Paleo Friendly Flours
To ensure these pancakes are both keto and paleo-friendly, we utilize a thoughtful blend of almond flour and coconut flour. This combination is key to achieving that desirable light and fluffy texture without relying on traditional grains. Almond flour, made from finely ground almonds, is celebrated for its low-carb content, rich nutritional profile, and ability to add moisture and a subtle nutty flavor to baked goods. Coconut flour, on the other hand, is highly absorbent, provides essential fiber, and helps to bind the ingredients together, giving the pancakes a robust yet tender structure. Together, these flours create a harmonious base that is both incredibly healthy and deliciously satisfying.
Sweetness is added sparingly, with just one tablespoon of monk fruit, a natural, zero-calorie sweetener perfect for keto. For those following a paleo diet, coconut sugar offers a delightful caramel note while still being a less refined option than white sugar. This minimal approach to sweetness allows the vibrant pumpkin flavor and the aromatic warmth of pumpkin pie spice to truly shine through. One teaspoon of quality pumpkin pie spice is all it takes to infuse these pancakes with that signature fall essence, making every bite a comforting embrace of the season.

Mastering the Batter: Tips for Fluffy Perfection
One notable characteristic of this batter, compared to traditional flour-based pancake recipes, is its slightly thicker consistency. Because almond and coconut flours behave differently, the batter won’t spread out on its own as much when poured onto the griddle. This is perfectly normal and actually a key part of achieving their delightful texture. After pouring about a quarter-cup of batter for each pancake, I gently use the back of my measuring cup or a spoon to spread it out into a nice, even circle. This ensures you get beautifully flat, perfectly cooked pancakes every time.
As these pancakes cook on the griddle over medium heat, watch for the magic to happen. The edges will begin to turn a beautiful golden brown, and you’ll see small bubbles breaking through the surface of the batter. These visual cues are your signal that the pancakes are developing crisp edges and a light, airy interior, ready for a gentle flip. This careful attention to the cooking process is what guarantees a truly exceptional pancake experience.
The Golden Rule of Pancakes: Never Press Them Down!
Here’s one of the most important tricks I’ve learned over years of pancake making: absolutely NEVER press down on your pancakes with a spatula after you’ve flipped them. While you might see this depicted in movies or cartoons, it’s a common mistake that actually works against achieving that coveted light and fluffy texture. Pressing down forcibly deflates all those wonderful air bubbles that have formed during cooking, which are essential for creating a tender, airy pancake. Instead, you’ll end up with dense, heavy pancakes reminiscent of hockey pucks. Resist the urge, let them cook naturally, and you’ll be rewarded with pancakes that are beautifully risen and incredibly soft.

Unbeatable Flavor and Versatile Toppings
The flavor profile of these Keto + Paleo Pumpkin Pancakes is truly unbeatable. Each bite delivers a harmonious blend of warm spices, subtle sweetness, and the comforting essence of pumpkin, spiced to absolute perfection. They are incredibly versatile when it comes to toppings, allowing you to customize them to your dietary needs and personal preferences.
For those strictly adhering to a keto lifestyle, topping your pancakes with creamy almond butter or rich pecan butter adds healthy fats and a boost of flavor without adding extra carbs. For paleo enthusiasts, a generous drizzle of pure maple syrup is a classic and delightful choice. Beyond that, the possibilities are endless! Consider adding a dollop of paleo coconut whipped cream for a luxurious touch, a sprinkle of chopped nuts for crunch, a smear of melted ghee for richness, or even a spoonful of homemade paleo pumpkin butter to intensify the pumpkin experience. A classic favorite like almond butter also works wonderfully for both dietary styles. Get creative and enjoy these healthy pumpkin pancakes with your favorite accompaniments!

Ingredients
- ½ cup pumpkin puree
- 4 large eggs
- 1 tablespoon monk fruit, or coconut sugar
- ½ cup almond flour
- 2 tablespoons coconut flour
- 1 teaspoon pumpkin pie spice
- 1 teaspoon baking powder
- coconut oil to grease the pan
- Toppings of choice: pure maple syrup, coconut whipped cream, nuts, paleo pumpkin butter, ghee, almond butter
Instructions
- In a medium size bowl, whisk together the pumpkin puree, eggs and coconut sugar (or monk fruit).
- In a separate medium size bowl, whisk together the almond flour, coconut flour, pumpkin pie spice and baking powder.
- Pour the wet ingredients into the dry ingredients, and whisk gently to combine. Continue to whisk until any lumps are smoothed out, ensuring a uniform batter.
- Preheat a large nonstick pan or griddle over medium heat. Add about 1 tablespoon of coconut oil to lightly grease the surface. Pour ¼ cup of the batter for each pancake, then use the back of your ¼ cup measure to gently smooth out and flatten the pancake. Remember, this batter is slightly thicker than traditional pancake batter and will not spread much on its own.
- Cook the first side for approximately 3 minutes, or until the edges are beautifully golden brown and small bubbles begin to break through the top surface. Carefully flip the pancakes and continue to cook for another 2-3 minutes, until golden and cooked through. Avoid pressing down on the pancakes with your spatula.
- Serve these delicious pancakes warm, topped with your favorite keto or paleo-friendly pancake toppings.
