Why Pork Tenderloin Deserves a Spot in Your Dinner Rotation
For too long, chicken and fish have dominated the weeknight dinner scene in many kitchens. While undeniably versatile and healthy, expanding your protein repertoire can open up a world of exciting flavors and textures. That’s where pork tenderloin gracefully steps in. Over the past year, I’ve become a huge advocate for incorporating more pork into our meals, and for good reason.
Pork tenderloin is often overlooked, but it’s a truly remarkable cut of meat. It’s incredibly lean, making it a fantastic source of high-quality protein without excessive fat. Beyond its nutritional benefits, pork tenderloin is surprisingly inexpensive, offering incredible value for its quality and versatility. Like chicken, it acts as a blank canvas, eagerly absorbing whatever flavors you choose to impart, whether through marinades, rubs, or, as in this recipe, a delectable sauce. This adaptability makes it an ideal choice for experimenting with various cuisines and seasonal ingredients.
I’ve previously explored the diverse potential of pork with dishes like Rosemary Honey Mustard Pork Tenderloin, offering a savory-sweet glaze, and Pork Chops with a Chunky Red Pepper Sauce, which brought a vibrant, robust flavor. My personal favorite used to be Pork Chops with Orange Pecan Pesto, a unique blend of nutty and citrusy notes that truly elevated the humble chop. However, as the seasons shifted and the air grew colder, a new star emerged in our kitchen, quickly claiming the title of our ultimate family favorite: this sensational Pumpkin Butter & Thyme Pork Tenderloin. I’m not exaggerating when I say we’ve been making it almost weekly!

The Secret to Succulent Pork: Searing & Roasting
The magic of this Pumpkin Butter & Thyme Pork Tenderloin lies in its straightforward yet effective cooking method. We begin by searing the pork tenderloin in a hot cast iron skillet. This crucial step is key to achieving that coveted golden, crusty exterior that locks in moisture and adds an incredible layer of flavor and texture to the meat. The high heat creates a beautiful caramelization, transforming the surface of the pork into a rich, savory crust.
Once seared to perfection, the tenderloin is generously topped with the star of the show: the most delicious and incredibly easy pumpkin butter and fresh thyme sauce. This luscious topping infuses the pork with a unique blend of sweet, savory, and aromatic notes. After applying the sauce, the skillet, with the pork nestled inside, is simply transferred to the oven to finish roasting. This combined method of searing and then roasting ensures the pork cooks evenly, remaining wonderfully juicy and tender on the inside while developing deep flavors on the outside.
The best part? This entire process is designed for speed and convenience. Dinner is remarkably ready in just 30 minutes, with only about 5-10 minutes of active prep time. The oven does most of the heavy lifting, allowing you to focus on other things or simply relax while your delicious meal comes to life. It’s a true weeknight warrior recipe that delivers gourmet taste with minimal effort.
To round out this quick and easy meal, I often like to roast some complementary sides in the oven alongside the pork. Perfectly roasted potatoes and simple roasted Brussels sprouts are my go-to choices. They can bake at the same temperature, streamlining the cooking process and making cleanup a breeze. This approach to meal planning not only saves time but also ensures a balanced and satisfying dinner with layers of flavor and texture.

Achieving Perfect Pork Doneness Every Time
The hallmark of a truly great pork tenderloin is its juiciness and rich flavor, qualities this pumpkin butter and thyme sauce enhances beautifully. To guarantee a consistently perfect result – tender, succulent, and safe – getting the internal temperature right is paramount. There’s truly nothing worse than dry, overcooked pork, except perhaps raw, undercooked pork. Both scenarios are easily avoidable with the right tools and a little attention to detail.
That’s why I can’t recommend an instant-read thermometer enough. It’s one of my absolute kitchen must-haves, especially when cooking proteins like pork. The ideal internal temperature for pork tenderloin, as recommended by the USDA, is 145 degrees Fahrenheit (63°C). This temperature ensures the pork is thoroughly cooked while remaining incredibly tender and moist. Once removed from the oven, allow the pork to rest for a few minutes. This resting period is crucial; it allows the juices to redistribute throughout the meat, resulting in an even more flavorful and tender bite. The temperature will also continue to rise slightly, a phenomenon known as “carry-over cooking,” further perfecting its doneness. If you don’t already own one, consider investing in a good instant-read thermometer – it will revolutionize your cooking and ensure consistently delicious results every time.

The Star Ingredient: Pumpkin Butter
The heart of this recipe’s unique flavor profile comes from the pumpkin butter. While store-bought pumpkin butter (Trader Joe’s often has a great seasonal option!) can certainly make this recipe even quicker, for those prioritizing health and specific dietary needs, I prefer to use my homemade paleo pumpkin butter. My version is sweetened naturally with honey, ensuring it remains free from refined sugars.
During the colder months and holiday season, it’s easy to indulge in sweets (and believe me, I’m guilty of enjoying a few too many Brownie Cookies!). That’s why I make a conscious effort to incorporate healthier choices into my main meals whenever possible. Using a naturally sweetened pumpkin butter allows us to enjoy the rich, warming flavors of pumpkin and spices without the added refined sugars often found in commercial varieties. This mindful substitution keeps the dish both delicious and compliant with paleo and refined sugar-free dietary guidelines.
The combination of rich pumpkin and warm spices, complemented by the fresh, aromatic thyme, creates a flavor profile that is simply perfect for chilly evenings. It’s comforting, wholesome, and incredibly satisfying. This dish truly embodies the essence of fall and winter cooking, bringing warmth and bold taste to your table. Moreover, its naturally gluten-free and dairy-free composition, especially when paired with homemade pumpkin butter, makes it a truly inclusive meal that caters to various health preferences and dietary restrictions.

Ingredients
- 1- pound pork tenderloin, I get my pork from ButcherBox, which I highly recommend
- 1 tablespoon olive oil
- salt & pepper, to taste
- ⅓ cup paleo pumpkin butter, or store bought (note: store bought may not be paleo or refined sugar-free)
- 2 tablespoons unsweetened apple sauce
- 1 tablespoon fresh thyme, chopped
Instructions
-
Preheat oven to 425 degrees F (220°C) with the rack in the middle position. Place a cast iron skillet over medium-high heat and allow it to get very hot.
-
In a small bowl, combine the pumpkin butter, unsweetened apple sauce, and fresh thyme. Stir thoroughly until well combined. Set this flavorful sauce aside.
-
Pat the pork tenderloin completely dry with paper towels. This step is essential for achieving a good sear. Season all sides of the pork generously with salt and freshly ground black pepper. Once the cast iron skillet is hot, add the olive oil. Carefully place the seasoned pork tenderloin into the hot skillet and sear on all sides until a beautiful golden-brown crust forms, approximately 2 minutes per side. Once seared, spoon the prepared pumpkin butter & thyme mixture over the top of the pork tenderloin, spreading it evenly to coat.
-
Transfer the cast iron skillet containing the pork tenderloin to the preheated oven to finish cooking. Roast until the internal temperature of the pork reaches 145 degrees F (63°C) when measured with an instant-read thermometer. This typically takes about 15 minutes, but cooking time may vary based on the thickness of your pork tenderloin. Remove the cast iron skillet from the oven, then transfer the pork tenderloin to a cutting board. Allow the pork to rest for a few minutes before slicing. This resting period helps retain the juices, ensuring a more tender and flavorful result.
-
Slice the pork tenderloin into ½-inch thick medallions. Serve immediately and enjoy warm.
-
Leftovers can be stored refrigerated in an airtight container for up to 3 days, making this a great meal prep option.
