Delicious Skirt Steak with vibrant Chimichurri Sauce, perfect for a Paleo, Whole30, gluten-free, and low-carb meal. An affordable and easy steak dinner recipe.

There’s nothing quite like the satisfaction of preparing a fresh, wholesome meal at home. While quick grab-and-go options can be tempting, taking the time to cook something delicious and nourishing not only tastes better but also offers peace of mind regarding ingredient quality and freshness. It’s a wonderful feeling to know exactly what’s going into your body, especially after a slight mishap with a forgotten expiration date! Luckily, no harm was done, but it served as a gentle reminder that some meals are just best prepared in your own kitchen. And with a recipe like this Skirt Steak with Chimichurri, you’ll find yourself craving homemade more often than not. It’s so good, you won’t even think about leftovers!

My husband, Shawn, is particularly diligent about food freshness, which can sometimes make managing leftovers an interesting challenge in our home. If meat says “use or freeze by,” he’s got a full interrogation ready if it’s thawed past that date, even if it was frozen properly. And milk? Forget about it if it’s two days from expiring! While his cautious nature is admirable, it means I often get to enjoy all the extra deliciousness myself. However, with this particular paleo skirt steak recipe, there are rarely any leftovers to debate over. It’s simply too irresistible.

Juicy Skirt Steak generously covered in homemade Chimichurri Sauce, an ideal healthy and affordable steak recipe for grilling. Paleo, Whole30, Gluten-Free, Low-Carb friendly.

This recipe for Skirt Steak with Chimichurri Sauce is hands-down one of my absolute favorites, and it consistently disappears from the plate. We all adore steak, but the premium cuts can often put a significant dent in the grocery budget. This is where skirt steak, or its close cousin flank steak, becomes a true kitchen hero. These cuts are remarkably affordable, allowing you to enjoy a gourmet-quality meal without the hefty price tag. For less than $10, Shawn and I can share a succulent one-pound flank steak, making it an incredibly economical choice for a date night in or a family dinner.

Skirt steak, by itself, has a robust beefy flavor, but it truly shines when paired with a vibrant sauce. Its unique, open-grained texture is perfect for absorbing marinades and sauces, making it an ideal canvas for the bold flavors of chimichurri. The steak might not be as tender as a filet mignon, but when cooked correctly and sliced against the grain, it offers a wonderfully satisfying chew and rich taste that stands up beautifully to the bright, herbaceous chimichurri. This combination creates a perfect balance of savory steak and fresh, piquant sauce, turning a simple cut of meat into an extraordinary dining experience.

The Unbeatable Charm of Chimichurri Sauce

Chimichurri is more than just a sauce; it’s a flavor explosion. Originating from Argentina and Uruguay, this uncooked green sauce is traditionally served with grilled meats. Its secret lies in the fresh, simple ingredients that come together to create a complex and irresistible flavor profile. The primary components are finely chopped parsley and cilantro, minced garlic, olive oil, and red wine vinegar, often with a hint of red pepper flakes for a subtle kick. The freshness of the herbs, the pungency of the garlic, the tang of the vinegar, and the richness of the olive oil create a harmonious blend that cuts through the richness of the steak beautifully.

What makes homemade chimichurri so special is its incredible versatility and ease of preparation. You simply combine all the ingredients in a food processor and pulse until just combined, ensuring you don’t over-process it into a smooth paste. You want to retain some texture, allowing the individual flavors of the herbs and garlic to shine through. This sauce isn’t just for steak; it can elevate grilled chicken, fish, roasted vegetables, or even be used as a flavorful marinade. Preparing it fresh ensures the most vibrant taste, and it’s a fantastic way to add a gourmet touch to any meal.

Grilling Your Skirt Steak to Perfection

One of the joys of living in California is the opportunity to grill outdoors for most of the year, even in what might be considered “off-season” elsewhere. We often fire up our outdoor grill for this skirt steak, and the smoky char it imparts is simply divine. However, if outdoor grilling isn’t an option for you, don’t fret! This steak turns out just as fantastic when cooked on an indoor grill pan. We relied on ours constantly before we had a backyard, and it never disappointed. The key to a perfectly cooked skirt steak, regardless of your equipment, lies in high heat and careful monitoring.

We are definitely a medium-rare steak family in our household, believing it allows the meat to be at its most tender and flavorful. For achieving this perfect doneness every time, a reliable meat thermometer is your best friend. It takes all the guesswork out of grilling, ensuring your steak reaches an internal temperature of 135 degrees Fahrenheit for that ideal medium-rare finish. No more overcooked, tough steak!

Before grilling, it’s crucial to prepare your skirt steak properly. Pat it dry with paper towels to ensure a good sear, then season generously with salt and freshly ground black pepper. Don’t be shy with the seasoning; skirt steak can handle it. Preheat your grill or grill pan over high heat until it’s sizzling hot, then brush with a little olive oil to prevent sticking. Place the seasoned steak on the hot surface and grill for about 5-6 minutes per side. The exact time will vary based on thickness and your desired doneness, so always rely on your meat thermometer. Once cooked, transfer the steak to a cutting board and let it rest for at least 5 minutes. This resting period is vital, allowing the juices to redistribute throughout the meat, resulting in a more tender and juicy final product. Finally, and this is critical for skirt steak, slice it against the grain into ½-inch thick slices. Slicing against the grain breaks up the tough fibers, ensuring every bite is tender and enjoyable. Serve these delicious slices piled high and topped with generous spoonfuls of your freshly made chimichurri sauce.

Serving Suggestions and Dietary Benefits

This Skirt Steak with Chimichurri Sauce is a complete meal in itself, bursting with flavor and wholesome ingredients. To round out the plate, I love serving it with my perfect roasted potatoes, which provide a comforting and satisfying starch. Sautéed mushrooms are another fantastic accompaniment, adding an earthy depth that complements the steak beautifully. For a lighter touch, a simple green salad or some grilled asparagus would also be wonderful. The vibrant colors and fresh flavors make this an impressive dish for entertaining, yet it’s simple enough for a weeknight family dinner.

Beyond its incredible taste, this recipe ticks all the boxes for a healthy lifestyle. It’s naturally Paleo and Whole30 compliant, meaning it’s free from grains, legumes, dairy, sugar, and unhealthy oils. The focus is on lean protein and fresh, nutrient-dense vegetables and herbs. Being gluten-free makes it accessible for those with celiac disease or gluten sensitivities, while its low-carb nature is excellent for managing blood sugar and supporting weight goals. This dish proves that healthy eating can be incredibly delicious and satisfying, without ever feeling restrictive.

Ingredients

Steak

  • 1 pound skirt steak, or flank steak, any large parts of fat trimmed (I get my steak from ButcherBox, which I highly recommend)
  • salt and pepper

Chimichurri Sauce

  • ½ cup parsley leaves, torn from 1 bunch, some stems ok
  • ½ cup cilantro leaves, torn from 1 bunch, some stems ok
  • ¾ cup olive oil
  • ¼ cup red wine vinegar
  • 3 cloves of garlic
  • 1 teaspoon red pepper flakes
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions

Chimichurri Sauce

  • Combine all the chimichurri ingredients in a food processor. Pulse for about 10-15 seconds until just combined. Be careful not to over-process; you want a slightly chunky sauce, not a smooth paste. Transfer to a container and set aside.

Steak

  • Preheat your grill (or indoor grill pan) over high heat. Lightly brush the grill grates or pan with olive oil. Season the skirt steak generously with salt and pepper on both sides. Grill each side for approximately 5-6 minutes, or until the steak reaches an internal temperature of 135 degrees Fahrenheit for medium-rare. Adjust cooking time as needed for your desired doneness.
  • Once cooked, transfer the steak to a cutting board and allow it to rest for at least 5 minutes. This crucial step helps the juices redistribute, resulting in a more tender and flavorful steak. After resting, slice the steak against the grain into ½-inch thick slices. Serve immediately, topped generously with the freshly prepared chimichurri sauce.
